O projecto Forno de Mesa, propõe-se a revisitar a sazonalidade e as estratégias tradicionais alentejanas de preparação e conservação de alimentos, procurando aplicá-las em produtos que respondam a necessidades contemporâneas. A forma como cuidamos de nós próprios é por vezes tão automatizada, no ritmo acelerado em que vivemos, que o momento das refeições diárias passa somente pela “ingestão de alimentos”, uma situação funcional, na qual colocamos, dentro do nosso corpo alimentos que não conhecemos, não sabemos de onde vêm, nem como são confeccionados. Esquecemo-nos de coisas como os aromas da degustação e preparação de alimentos sazonais. A produção intensiva de alimentos cria uma monotonia de paladares que nos vai habituando a uma falta de diversidade naquilo que ingerimos. Partindo destes pressupostos procurou-se, neste projecto, promover a cultura do tempo e dos sabores reais, tempo para desfrutar de cada sabor a seu tempo, vindo do local certo, de um local que conhecemos. A contemplação unida ao prazer de uma boa refeição, preparada segundo rituais endógenos e partilhada com aqueles que mais gostamos. É com os olhos postos no “modo de ser” e no património alentejano, que procuramos soluções para estas pausas de fruição. Identificando na história do Alentejo (na sua cultura imaterial, tradições, formas de viver, modos de relacionamento, e gastronomia) uma diversidade de acções e contextos que nos permitem treinar a nossa habilidade de fruir e degustar. O vínculo emocional dos alentejanos com a terra, o aproveitamento de um variadíssimo tipo de alimentos selvagens, bem como a própria planície, a calma e a partilha de experiências, saberes e bens, oferecem-nos soluções para a criação de momentos memoráveis. Este projecto desenvolveu-se no sentido de criar um conjunto de objectos que funcionem como motor para a criação de momentos de partilha e contemplação em torno da mesa. |
